I’ve got the turkey carcass boiling for soup.  The laundry machines are humming away.  I’m working on tidying up and a bit of decorating for the Christmas Party I’m hosting here on Thursday.  Soon I’ll make a run to town for wine and other stuff while the turkey cools.

Cinderella’s Pumpkin Waffles

by Matilda on 11.23.08 at 10:44 AM See more in Recipe

1-1/2 cups all-purpose flour
1/4 cup packed dark brown sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 teaspoon salt
1 egg
1-1/4 cups low-fat milk
1/2 cup canned pumpkin
2 tablespoons vegetable oil
Nonstick cooking spray

Preheat the waffle maker according to its directions.
Combine the flour, sugar, baking powder, cinnamon, and salt in a large bowl.  Lightly whisk, or stir, to mix it well.  You may need to crumble any bits of brown sugar with your fingers to be sure there are no lumps.  Then whisk it again.
Combine the egg, milk, pumpkin, and oil in a small bowl.  Whisk, or stir, to mix them well.
Pour the egg mixture into the flour mixture.  Stir it gently until it forms a smooth batter.
Spray both sides of the waffle maker lightly with nonstick cooking spray.
Use a 1/2 cup measuring cup to pour a heaping amount of the batter onto the grids.  Scrape out the inside of the cup with a soup spoon (this if fairly thick batter).  Use the spoon to spread the batter to the edges of the grids.  Close the top, and cook for about 4 minutes (some waffle makers have a light that tells you when they’re done), or until the waffle is set and the top opens easily.  Use a fork to remove the waffle.

We were invited to CobornsDelivers Holiday Open House.  Lots of great food and wine.  But, the best part was the warehouse tour!  Now I have a better understanding of how my groceries get from their warehouse to my kitchen.

My new ACR Personal Locator Beacon arrived today.  In a box marked; “Primary Lithium Batteries – Forbidden for Transport Aboard Passenger Aircraft”.  Are all lithium batteries forbidden aboard passenger aircraft?  Odd.

As is our tradition, Avery and I went to “A Day in the Life of an Elf at Macy’s Santaland”.  Avery had a nice chat with Santa and her picture taken.  We did a bit of shopping, she found a purple velvet dress she liked.

My Dell Precision M4400 was locked up this morning.  It wasn’t connected to the network or my Verizon XV6800.  Next theory?

I’m beginning to think the lock up issue with my Dell Precision M4400 may actually have something to do with my Verizon XV6800.

Woodway Treadmill:  51 minutes, 3.0 miles, 3.5 mph, HR=125.  Stamina L3 was too fast and too flat.  My Dell Precision M4400 keeps locking up.  The only resolution is to force a restart by holding the power button.  I believe it’s a conflict between the Symantec Corporate Client that Rent-A-Geek installed on Thursday and Windows Defender.  It worked fine at home all weekend when I was not attached to the network.
